Doug Kaufmann, of the television series Know the Cause, advocates most diseases originate from yeast, fungus and molds.  Please read and watch the videos at knowthecause.com.

The anti-fungal diet consist of staying away from foods that encourage the growth of yeast; such as, sugar, alcohol, breads, etc...

Below is a chart of what to eat for the Phase 1 diet.

EGGS  
FRUIT Berries, grapefruit, lemon, lime, green apples, avocado, fresh coconut
MEATS Virtually all meat including fish, poultry and beef
VEGETABLES Most fresh, unblemished vegetables and freshly made vegetable juice
BEVERAGES Bottled or filtered water, non-fruity herbal teas, stevia sweetened fresh lemonade or limeade, freshly squeezed carrot juice
VINEGAR Apple cider vinegar
OILS Olive, grape, flax seed, cold pressed virgin coconut oil
NUTS Raw nuts, including pecans, almonds, walnuts, cashews, and pumpkin seeds. Stored nuts tend to gather mold, so be careful!
SWEETENERS Stevia, Stevia Plus, birch tree extracted Xylitol
DAIRY Organic Butter, Organic Yogurt, (use the following very sparingly) cream cheese, unsweetened whipping cream, real sour cream.

Never eat wheat and corn and their related products!!!  All are tainted with mycotoxins, via processing and storage.  See column right.  Alcohol and mushrooms are also excluded in this diet.

Doug Kauffman's Phase 2 Diet

Phase 2 diet includes Phase 1 plus legumes, some grain products, and sweet potatoes.

"Aflatoxin B1 is the most potent liver cancer-forming chemical known.  It is a product of a mold called Aspergillus flavus, which is found in food that has been stored in a hot and humid environment.  This mold is found in such foods as peanuts, rice, soybeans, corn, and wheat. Aflatoxin B1 has been implicated in the development of liver cancer in Southern China and Sub-Saharan Africa.  It is thought to cause cancer by producing mutations in the p53 gene.  These mutations work by interfering with the gene's important tumor suppressing functions."
